Seared Ahi Tuna with Mango Salsa 6

A Flavorful Healthy Meal From One of the Valley’s Finest Chefs

Serves Four

Fish

+ 1½ lbs center cut sashimi-grade ahi 
 tuna, tataki cut

+ 2 tbsp sesame oil

+ Sea salt

+ Freshly ground black pepper


Salsa

1 large ripe mango, diced

+ 2 tbsp chili oil

+ Juice of one lime

+ 2 tbsp red bell pepper, small dice

+ Dash sea salt and white pepper

Method

In a heavy sauté pan or cast iron skillet, heat pan until very hot. Season tuna with sea salt and black pepper. Season hot pan with sesame oil until it is smoking. Add tuna tataki cut, browning each side for about 20 seconds. Slice and arrange tuna over your favorite rice. Top with mango salsa. Garnish the plate with thinly sliced English cucumbers and sriracha dots.
